Tex-Mex grilled chicken wraps
Here's an easy recipe the whole family will enjoy over the weekend, or any night for that matter! ALL the ingredients for this recipe are now available at your local Ritchies supermarket. Find your local VIC, NSW or QLD store.

- Tex-Mex grilled chicken wraps
- 8 chicken tenderloins
- 1tablespoon olive oil
- 3 tablespoons taco seasoning
- 1teaspoon smoked paprika
- ½ lime, juiced
- 4 x 10" flour or corn tortillas, warmed
- To serve
- shredded lettuce
- tomato diced
- avocado sliced
- salsa sauce
- jalapenos sliced nacho style (optional)
Method
In a small bowl or plastic bag place the chicken tenderloins, oil, taco seasoning and lime juice. Mix to coat chicken well. Place the chicken onto the grill plate of the BBQ or into a preheated griddle or frying pan and cook for about 3 minutes each side or until cooked through. Remove from heat and rest in a warm place. Place one tortilla on a flat surface, lay two chicken tenderloins in the centre, top with a little shredded lettuce, diced tomato, avocado, salsa sauce and jalapenos if your using them. Fold the bottom ¼ of the tortilla over the filling then turn ¼ and roll the tortilla to secure the filling. Serve warm or cold. Makes 4.
Tips: Tortillas come in different varieties, if your using corn tortillas make sure they are really warm as this makes them far easier to roll. As an option for attractive presentation wrap a piece of grease proof around the centre of the wrap and secure with kitchen string.
