Cajun Chicken Caesar Salad

Looking for a low carb, high protein salad with massive flavour? Try this tender Cajun chicken Caesar salad with spiced chicken breast, crisp cos lettuce, shards of bacon and zingy sauce. Prepare it on the barbecue and serve with a chilled Pinot Grigio.

Ingredients

  • 4 Ritchies chicken breasts, medium sized, skin off
  • Cajun style seasoning
  • 1½ tablespoons smoked sweet paprika
  • 1 tablespoon dried oregano
  • 1 tablespoon fresh thyme leaves, chopped (or 2 teaspoons dried thyme)
  • 1 tablespoon freshly ground black pepper
  • 1 teaspoon cayenne pepper
  • 2 teaspoons sea salt
  • 2 medium garlic cloves, crushed
  • 3 tablespoons olive oil
  • for the salad
  • 8 rashers of rindless streaky bacon, cooked until crisp
  • 3 baby cos lettuce, washed and cut into quarters
  • ½ cup parsley leaves, washed
  • Caesar style dressing
  • 4 tablespoons mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • lemon juice and zest, to taste (about 1 lemon)
  • 4 anchovies, crushed (optional)
  • freshly ground black pepper

Method

  1. Pre heat the oven to 190oC or a hooded barbecue to medium hot. In a large bowl, mix the spices for the Cajun seasoning with the olive oil and garlic. Add the Ritchies chicken breasts, and using tongs or clean hands, coat them thoroughly in the oil and spice mixture. Place them on a baking tray and bake them in the preheated oven or BBQ for about 20 minutes or until they are cooked through and the spices have started to toast dark brown. Remove from the oven, cover in foil and allow to rest.
  2. In a small bowl stir together all the dressing ingredients and season with black pepper. (Note, if you don’t use anchovies you will need to add extra salt).
  3. Slice the cooked chicken breasts thickly on a slight diagonal. Assemble the salad on a large plate with the wedges of lettuces, sliced chicken and parsley leaves, drizzled with the dressing and topped with shards of crisp streaky bacon. Serve immediately.

Serves 4. Preparation time 15 minutes. Cooking time 20-25 minutes.
