Ingredients

  • 4 sheets frozen butter puff pastry defrosted
  • 8 of your favourite Ritchie’s sausages
  • 2 tablespoons of seeded French style mustard (optional)
  • 1 egg beaten
  • tomato sauce or your favourite tomato relish to serve

Method

  1. Line a large baking tray with greaseproof paper.
  2. Work with one sheet of pastry at a time and leave the plastic backing on to make it easier to handle. On a large chopping board using a very sharp knife. Cut each slice of pastry in half. Spread a thin layer of seeded mustard down the center of each half of pastry.
  3. Remove the casings from each sausage. Use your fingers to stretch the meat to fit the length of the piece of pastry and lay a skinned sausage on each half. Dampen one edge of the pastry and use plastic backing to roll the pastry over the sausage meat. Press the two edges together to seal, discard the backing plastic and then cut each long section into 4.
  4. Slash the top of each sausage roll 2 or 3 time for decoration and place on the lined baking tray. Then repeat with the other sheets of pastry and sausages.
  5. Glaze each roll by brushing with beaten egg. Then bake in the preheated oven for about 15 minutes until cooked through and golden brown. Serve warm with your favourite sauce as a snack or with salad as a light meal.

Tip: We used seeded mustard to make these sausage rolls taste amazing but you can use your favourite chutney or even sweet chill sauce for a change, just remember to use a thin layer Makes 32.
