Here’s an easy recipe the whole family will enjoy over the weekend, or any night for that matter!
8 chicken tenderloins
1 tablespoon olive oil
3 tablespoons taco seasoning
1 teaspoon smoked paprika
½ lime, juiced
4 x 10“ flour or corn tortillas, warmed
jalapenos sliced nacho style (optional)
In a small bowl or plastic bag place the chicken tenderloins, oil, taco seasoning and lime juice.
Mix to coat chicken well. Place the chicken onto the grill plate of the BBQ or into a preheated griddle or frying pan and cook for about 3 minutes each side or until cooked through.
Remove from heat and rest in a warm place. Place one tortilla on a flat surface, lay two chicken tenderloins in the centre, top with a little shredded lettuce, diced tomato, avocado, salsa sauce and jalapenos if your using them.
Fold the bottom ¼ of the tortilla over the filling then turn ¼ and roll the tortilla to secure the filling.
