Vegetarian Tofu Stir-Fry

- Ingredients:
- 2 tbsp olive oil
- 2 tbsp Lainey’s vegan chilli oil
- 1 packet of pre-fried tofu
- 1 tsp salt
- 1 tsp cracked black pepper
- 2 tsp brown sugar
- 3 ½ tbsp soy sauce (light or dark, according to preference)
- 1 white onion, cut into wedges
- 2 cloves of garlic, minced
- 5 cm piece of ginger, julienned
- ½ bunch of spring onions, cut into 4 cm lengths
- 1 yellow capsicum, seeded and sliced
- 1 red capsicum, seeded and sliced
- 350g long string beans, chopped into 4 cm lengths

Method
- Heat olive oil in a wok over medium to high heat. Add the julienned ginger and sauté for about a minute. Then, add the minced garlic and onion wedges. Cook for another minute until fragrant.
- Add the chopped string beans to the wok, stirring well to combine with the ginger, garlic, and onions. Drizzle in Lainey’s chilli oil and continue to mix.
- Add sliced capsicums and pre-fried tofu to the wok, mixing thoroughly. Then, add the seasonings: salt, cracked black pepper, and brown sugar (as mentioned in the note).
- Pour soy sauce over the tofu and vegetables.
- Stir everything together until the tofu and vegetables are well coated in the seasonings. Reduce the heat and allow the dish to simmer for a few more minutes, taking care not to overcook the vegetables.
- Once the tofu and vegetables are cooked to your liking and coated in the flavourful sauce, remove the wok from the heat.
Serving Suggestions:
- Serve the stir-fry alongside cooked medium-grain rice. For an extra kick, drizzle additional Lainey’s vegan chilli oil over the dish before serving, if desired. Enjoy your delicious and nutritious vegetarian tofu stir-fry!
