Carbonara Pasta Bake

- 500 g dried penne pasta
- 1 tbsp olive oil
- 2 garlic cloves crushed
- 200 g bacon or prosciutto thinly sliced
- 200 g button mushrooms sliced
- 2 eggs
- ¾ cup (185 ml) cooking cream (light thickened cream)
- 1 cup (125 g) Perfect Italiano™ Extra Sharp Parmesan Grated
- 1 2/3 cups (150 g) Perfect Italiano™ Perfect Bakes cheese
- Pepper, to taste
Method
STEP 1
Preheat the oven to 200°C / 180°C fan-forced. Cook
pasta in large saucepan of boiling water, until just tender.
Drain. Return pasta to pan
STEP 2
Meanwhile, heat oil in a large frying pan over mediumhigh
heat. Cook garlic, bacon and mushrooms, stirring
for 6-7 minutes or until mushrooms are tender
STEP 3
Whisk eggs, cream and 2 cups of the combined cheeses
in a large jug. Season with pepper
STEP 4
Add egg mixture and bacon mixture to pasta. Toss gently
to combine. Transfer pasta mixture to a 1.5L (6-cup)
capacity baking dish. Scatter with remaining combined
cheeses. Bake for 15-20 minutes or until golden
