Pork spare ribs with Texas BBQ sauce

- •1.5kg pork spare ribs
- • 1 medium red onion, very finely chopped
- • 1 cup tomato sauce
- • 3 tablespoons Worcestershire sauce
- • 3 tablespoons red wine vinegar
- • 2 teaspoons fresh ginger, grated
- • 2 tablespoons dark brown sugar
- • 3 large cloves garlic, crushed
- • 1 teaspoon chilli flakes
Method
In a large nonreactive bowl combine all the marinade ingredients. Add pork spare ribs and stir until well coated. Cover with cling film and refrigerate for at least 1 hour or overnight. Preheat the oven to 190°C. Transfer the ribs and the marinade to a large nonreactive oven proof dish cover with a layer of baking paper topped by a sheet of foil, crimp the foil to seal the dish. Bake covered for about ¾ of an hour. Remove the foil cover and cook for another 30 mins turning the spare ribs occasionally and basting with the marinade mixture. The pork is ready when it's cooked through, tender, caramelized and dark golden brown. Serve with crusty bread and salad.
