Marinated King Prawns with Spicy Chilli Oil

- Ingredients:
- 1kg King prawns, cleaned, deveined, and slit along the back
- 1 tablespoon sesame oil
- 1 tablespoon salt
- 2 teaspoons brown sugar
- For the marinade:
- 1 large red chilli, deseeded and roughly chopped
- 1 large green chilli, deseeded and roughly chopped
- 3 cloves garlic, roughly chopped
- ½ bunch coriander roots, thoroughly washed
- 1 piece ginger (about 3cm), peeled and roughly chopped
- 4 sprigs spring onions, white part only
- 2 lemon grass stalks (about 4cm long), roughly chopped
- 1 tablespoon fish sauce
- 2 teaspoons lemon & lime juice
- 2 tablespoons chili oil

Method
- In a blender or food processor, combine the red chilli, green chilli, garlic, coriander roots, ginger, spring onions, lemongrass, fish sauce, lime juice, and chili oil. Blend until a smooth mixture forms.
- Place the cleaned prawns in a bowl and add the prepared marinade. Also, add sesame oil, salt, and brown sugar. Mix well to coat the prawns evenly with the marinade.
- Allow the prawns to marinate for a few hours or overnight in the refrigerator to enhance the flavour.
- When ready to cook, skewer each prawn lengthwise.
- Grill or barbecue the prawns until cooked through, turning occasionally, until they are pink and opaque.
- Serve the prawns with a refreshing garden salad or a zesty salad comprising tomatoes, cucumber, capsicum, coriander, and Thai basil. Drizzle some extra chili oil into the salad dressing for an added kick.
