Chicken Bites
Do you like Japanese inspired flavours? Try these chicken bites with sesame salt, they’re great as finger food and even better as part of a main meal.

- 500g minced chicken
- 3 spring onions finely sliced
- 1 teaspoon finely grated lemon rind
- 1 tablespoon peanut oil
- 1 tablespoon toasted sesame seeds
- 1 tablespoon sea salt flakes

- 2 tablespoons lemon juice
- 2 tablespoons sashimi soy or light soy

- spring onion tops cut in thin strips length ways and chilled in ice water to curl
Method
- Using a medium bowl add the chicken, spring onion and lemon rind and using your clean hands work the mixture for 2-3 minutes or until it’s well mixed and slightly sticky.
- Roll all the mixture into bite sized balls about 3-4 cm across.
- Heat peanut oil in a large frying pan and fry the chicken turning occasionally until light golden and cooked through – about 5-6 minutes. Rest on absorbent paper towel covered in foil.
- Make the sesame salt by processing the sea salt and roasted sesame seeds until fine using either a a small food processor or pestle and mortar.
- Make the dipping sauce by combining the soy and lemon juice.
- Serve the chicken bites warm on small skewers or toothpicks, sprinkled with a little of the sesame salt and top with spring onion curls with the dipping sauce on the side.
Tip: You can make the balls by using a small ice cream scoop rather than your hands. It’s faster and less messy!
