Greek style lamb pizza

- 1 x trim lamb back strap
- 2 x pizza bases (pita bread will also work)
- 2 cloves garlic, peeled
- 2 teaspoons dried oregano
- 4 large ripe tomatoes, thinly sliced
- 1 zucchini, long thin slice
- ½ red capsicum, seeds and membrane removed, thinly sliced
- 1 red onion, thinly sliced
- ½ cup pitted kalamata olives
- 250g Greek feta, broken into chunks
- 2 tablespoons olive oil
- 1 cup tasty cheese, grated
- 2 tablespoons fresh rosemary leaves, finely chopped
Method
Preheat the oven to 210°C
Brush the lamb back strap with olive oil, using a very hot frying pan, sear the meat quickly to seal it. Remove from the heat and place on a board. When cool enough to handle, slice thinly. Place both pizza bases in a baking tray lined with baking paper. Rub the bases roughly with garlic cloves and drizzle a little olive oil over each. Sprinkle with the dried oregano. Place the sliced seared lamb, tomato, onion, zucchini, capsicum over the bases then sprinkle evenly with the grated cheese. Arrange the feta and olives over the top, then scatter with chopped rosemary, top with a final drizzle of olive oil and place in the hot oven. Cook until the cheese bubbles and the pizza is piping hot. Serve immediately.
