Eye fillet steak with blue cheese sauce

- • 2 eye fillet steaks or beef medallion steaks
- • 1tablespoon olive oil
- • 25g strong blue cheese (we used Gorgonzola)
- • 200ml thickened cream.
- • sea salt and freshly ground black pepper.

Method
Preheat a BBQ or griddle to high. Rub the steak with olive oil and season with salt & pepper. Place on the grill and cook to your liking (5-6 minutes on the first side, then turn and cook for about 4 minutes on the second side for medium rare) Rest the steak covered in foil for 6-8 minutes before serving.
While the steak is resting make the super easy sauce, simply add the cream and blue cheese to a small heavy bottomed saucepan on a medium heat. Bring to a simmer and cook until the sauce starts to thicken (3-4 minutes) remove from heat and season with salt & pepper to taste. Serve the steak with the sauce immediately. Perfect with chunky chips and a simple salad.
Tip: This amount of blue cheese gives a milder flavour, add more if you like a stronger taste. Any strong flavoured blue cheese will work for this dish including Stilton, Roquefort and stronger flavoured Australian blue cheeses.
