Ingredients

  • 100 g maple syrup
  • 50 g brown sugar
  • 1 tbsp Worcestershire sauce
  • 4 tbsp wholegrain mustard
  • 1 leg ham (up to 8kg)

Method

Preheat oven to 160C.

Using a sharp knife, score the ham fat (not the flesh) at two-centimetre intervals into a honeycomb pattern. Insert a clove into each diamond of fat. Wrap the ham hock with foil (this prevents it from burning).

Make glaze by combining maple syrup, brown sugar, and Worcestershire sauce in a small saucepan over low heat. Stir for 2-3 minutes, or until the brown sugar dissolves. Remove from heat and stir in wholegrain mustard.

Brush ham with half the glaze and bake for 1 hour and 20 minutes. Increase oven temperature to 180C. Brush ham with remaining glaze and cook for a further 15 minutes or until golden. Cover loosely with foil and set aside to rest for 20 minutes before carving.
